So who doesn't recognize the most tourist destination place for vacation and leisure, Bali and Lombok Island, not only they have beautiful sceneries but both islands also offered a rich heritage in culinary experience, their foods somehow tastes amazing spicy using a lot combination of spices and herbs.
Traveling to each island may take huge time to explore its culture, places and taste its delicacies, but don't worry Hotel Indonesia Kempinski offered a wide range selection Culinary Delight from fifth origin region of Indonesia Archipelago's, Sumatra, Java, Bali-Lombok, Kalimantan, Sulawesi-Maluku to celebrate 70th anniversary of independence for Indonesia and the hotel's 53rd birthday.
Visited to Hotel Indonesia Kempinski as the famous landmark hotel in town after had a big major renovation in 2004, gave new ambiance feel toward the hotel and surround, the interior and furniture are modern, luxury, lively and upscale with preserve the historic element glory of the past, as prestigious and the first five star hotel in South East Asia. Drop to Signatures Restaurant, as walking inside we can see many big portraits of Hotel Indonesia founder and its American glass roof style in the middle of dining room, and at rear they added a modern open dining space with cubical glass and metal engraving work. Inside Signatures restaurant packed with many hotel guests and regular guests dining together in the weekend. At below is rear dining spatial with warm and bright daylight to the garden and pool view. One of selection from favourite region cuisine is Bali-Lombok, what i had from Bali-Lombok week was a sumptuous dining experience. Started from Bali-Lombok cuisine, some are famous dish like Ayam Betutu and Sate Lilit also provided. Placing in my first plate Jukut Nangka or braised young jackfruit in coconut milk, has delicate taste, salty savory with hinder fragrance of coconut milk, Ayam Betutu or slow roasted chicken with Balinese spicy, the chicken its self quite different from other Ayam Betutu because its was slow roasted that let the spice sat and absorbed into chicken meat for greater taste, its also has a nice moist and tender texture, beside tasty, juicy, spicy bits from underneath. Tum Ayam or Steamed Chicken in Banana Leaf, these little packets of spiced meat steamed or baked inside banana leaves. ‘Tum’ can contain any kind of
meat and are usually served with rice and vegetables, often as part of
the selection of side orders served with Lawar Bali. The one i tried was Tum Ayam wrapped with banana leaf, it was well cooked, the minced chicken was tasty, juicy, moist and got rich in flavor ad spices. This Tum Ayam indeed is one of Balinese cuisine’s real treats. Tum Ayam or Steamed Chicken in Banana Leaf appearance after opened up the wrapper. The second dish i had was Nasi Goreng Bali or Balinese fried rice with Sate Ayam Plecing or Balinese Chicken Satay and Tum Ayam as side dish. Balinese fried rice got wonderful taste sensation, I indulged in this spicy rice dish, the spices was well balance and perfect, the rice texture also match the dryness level. Sate Ayam Plecing or Balinese Chicken Satay topped up with peanut sauce has great taste to offer, it was delicious combo tasty, sweet and savory in other hand, a little bit spicy but not too fiery. These mixed seafood satay or to be known as Sate Lilit, is really a popular dish in Bali, different from usual Satay, this satay was made by rotate the minced meat that already mixed with spices into skewer until wrapped up half from the lemongrass skewer or bamboo skewer. Satay Lilit commonly used minced pork, minced chicken and minced mackerel. But the minced mackerel is the favourite one for Sate Lilit. The one in Signatures restaurant was made from mackerel and tastes superb authentic and heavenly good, tasty and dense with distinct scent from lemongrass served with Sambal Matah elevate spicy and sour into good munchies. As the appetizer set are Rujak Bulung or seaweed salad balinese, Srombotan or boiled mixed spicy vegetables, Jejeruk Ayam or chicken salad with coconut, Selada Ayam Bumbu Bali or balinese chicken salad. All appetizer are not too watery and made from fresh vegetable, as for Rujak Bulung placed right from picture above, i like the crunchiness from seaweed salty with hinder fragrance from spices. Srombotan placed in the middle from picture above taste more salty spicy and has strong fragrance from galangal and lemongrass. My favorite was Jejeruk Ayam or chicken salad with coconut placed left from picture above, it got moderation in spices, the shredded chicken mixed well with the coconut and unleashed milky taste people would love. The last one plate i had was Mie Kober Denpasar or spicy fried noodle, Selada Ayam Bumbu Bali or Balinese chicken salad, and Plecing Kangkung or morning glory with chili paste. Spicy Fried Noodle was pleasant and chewy, Balinese chicken salad a bit sour and spicy but refreshing. Morning glory with chili paste, the chili paste not too hot and tangy, it blend well with the morning glory.
Overall it was exciting tasting and having adventure with Bali-Lombok Cuisine, the foods were fresh, delightful, well cooked and suit people tastes. These cuisine was served in a lavish buffet that can be enjoyed with other local native heritage cuisine such as Sumatra, Java, Kalimantan, Maluku-Sulawesi all week long at brunch, lunch (from 12.00 pm to 03.00 pm) or dinner (from 6.00 pm to 10.00 pm), prices start at Rp 265.000 ++ per person.
